In the Summer of 2017, Consultant Noel Brohner of Slow Rise Pizza began discussions with King Arthur Flour representative, Jeff Yankellow about hosting skilled pizza makers Anthony Falco and Angelo Warmack to make pizza from locally sourced ingredients at their 2018 Pizza Expo booth. Noel included me and John Arena of Metro Pizza in the discussions and together we began a strategy to raise awareness of American pizza makers, their regional pizza creations and the use of locally produced quality equipment and ingredients.
Not only did attendees at Pizza Expo 2018 get incredible pizza, legendary pizza makers Daniele Uditi, Chris Bianco, Sarah Minnick, Tony Gemignani, Dan Richer, John Arena and Lee Hunzinger showed their generosity by accepting Noel's inventation to demonstrate their skills at the King Arthur booth throughout the three day show. It was an incredible success which I hope will be repeated for years to come.
We named the group #TheseHands because John Arena often ends a lecture by saying “at least three elements are critical to make an artisan pizza…Great Ingredients…the Proper Equipment…and These Hands.”
There are no rules, regulations or membership required at #TheseHands. No one’s in charge. Take what you like…leave the rest.
I intend to honor and celebrate the folks…The Hands that help me produce and deliver a California canned tomato to American pizza makers across the United States. There are stories both current and past that I’d like to tell. I want to shine a spotlight on those that got our company this far, and perhaps inspire others to carry us onward. The American Pizza Maker deserves the very best ingredients and this is my small contribution to help make that happen. As we like to say to the pizza makers we meet along the way: you are the artist, we are the paint.
